This makes 4 1/2 cup servings. The original recipe called for 3/4 c of orange sections and 1 1/4 c of grapefruit, but I can't have grapefruit because of my medication. If you are on diabetes medication, make sure you can have grapefruit before you decide to use it. Each serving has 59 calories.
2 cup orange sections
1 1/4 c diced apples
3 tbsp sherry (optional)
1 tsp lemon juice
1 pkg sugar substitute, or equivalent to 2 tsp. sugar
1/3 c sliced bananas
1/4 c shredded coconut
4 marschino cherries
Cut the orange sections in half.
Mix all the ingredients except the coconut, cherries, and bananas.
Refrigerate at least one hour; may be refrigerated up to twelve hours.
Add bananas right before serving. Sprinkle with cocoanut and garnish with cherries.
