Sorry, I think I should have capitalized the title but I'm in a rush. Situation: Adopted child, age 5, who STILL at age 15 won't eat beef unless it is disguised. Meal choices are limited but he loves soups. Favorites are bean soup, stuffed green peppers (light on the meat, heavy on the tomato sauce, pizza, chicken tenders, broccoli, etc. I'm running out of ideas. He like pizza, too. I could take the time to make homemade dishes most nights and still preer to. But I need some QUICK recipes that are light on red meat, heavy on chicken, sauces for pasta and green peppers (which he loves) He also like Brats and Italian sausage but I do worry about the fat content.
Suggestions welcomed.

This is for a stoup (soup+stew), a word made up by Rachael Ray, that I published several days ago - has a little beef, potatoes, carrots, onions and celery which can also include noodles or rice as desired.

Actually Jane I have another one for you too. It's called Pork Chop Casserole, is very easy and my kids still Love it. I haven't made it in over a year because I no longer eat canned soups. (it's made with cream of mushroom soup) But I need to just substitute evaporated milk and fresh mushrooms for the soup. I will try to post it for you tomorrow
I tend to serve "raw" fruits and veggies for AT LEAST one meal, like I will cut him up a fruit salad for dinner or some sort of veggie with dip. Kids LOVE to dip! This is so nutritious; keeps him healthy and at his best! Try to stay away from the artificial stuff -- colors, flavorings, corn syrup "fruit" snacks.
Don't send fruit or veggies to school unless you know they'll eat them. Serving them at home gives you the reassurance that they ate something healthy!
Since he likes tuna, there is a dish I make that is very much like tuna jackstraw which is REALLY good.
It's basically a tuna casserole with sliced hard-boiled eggs and potato chips crumbled on top.
I don't measure so here is the best I can do with amounts...it really is just personal taste though.
2 cans tuna
1 can cream of mushroom soup
2 - 3 hard boiled eggs
1/2 a soup can evaporated milk
salt and pepper to taste
Crushed potato chips
Mix everything but the potato chips together and bake until it begins to bubble, sprinkle crushed chips on top, and cook for 5-10 minutes longer.
It's simple, fast and tastes great!
My mom adds uncooked noodles to hers and add's a litte extra milk or water. My family likes it sans noodles and served over rice.

He hasnt eaten red sauce in about a year. He did eat a bite out of my hamburger one night and liked that. I am too nervous about giving him his own though, i dont think he will eat it. He wont eat Hard Tacos but loves soft ones with beef and cheese only in them. Of course, what kid wont eat Chicken Tenders. My son is a soft textured person
and always has been. I did order a thing off of the internet about autistic children and the poisons in certains foods that defer the behavior. My son has not eaten Apples, Applesauce, or Apple Juice in about a year (this is the #1 thing it says not to give them because of a pesticide) it has worked. His behavior has calmed down a lot. If worse comes to worse, give a multivitamin. This has worked for me. I know this is a lot to ask but with his age, meat is a hard thing to force on them. Have you looked for Vegetarian recipes? Yes, I love morningstar farms Chicken Ranch Parmesan Patties. You cannot taste the difference if you put a dab of ranch dressing on them instead of mayo.
