Tonight I had my favorite dinner. Wait, let me correct that. It’s my favorite dinner when my husband isn’t home to cook for me. When he’s not working late night hours, he makes such delicious meals that I couldn’t pick a favorite. When he is at work, I’m forced to make my own meals and on those nights I’m all about simplicity and ease. Of course I also like delicious tasting meals and that is why tonight’s gourmet meal combines easiness and great taste. I thought I’d share my recipe with all those that are on the lookout for something different for dinner. This recipe was passed down to me from my mom who would occasionally make this meal for my sister and me when we were younger. However, I have added my own twist to it as all good chefs must.
You begin by getting a microwave safe plate out of your cupboard or wherever you may store them. Onto this plate you will lovingly spread Doritos. I prefer the regular ones, but one could test it with the Cool Ranch or other flavors.
Once the chips are all in place, covering the plate fully, the next step is simple. Shredded cheddar cheese should generously be sprinkled over the chips until a nice layer of cheesiness exists. Then, for added flavor, shredded mozzarella cheese should be sprinkled over the aforementioned cheddar.
The hardest step in the process comes next. The plate with chips and cheese should be placed gently into the microwave. (Don’t forget to close the door!) Microwave the nachos on high for one to one and a half minutes (depending on the thickness of the cheese layers) and watch the cheese melt oh-so-yummily onto the Doritos.
Upon pulling the plate from the microwave after the beep, it will do well to take care as both the plate and cheese will be hot.
Enjoyment of the nachos is sure to follow. Feel free to play and fiddle with the recipe as you see fit. In my childhood my mom’s recipe only went so far as to have Doritos and cheddar cheese. I played with it and added the mozzarella. So who knows what fabulous combination you may be able to come up with.

Michelle & Nic, well, I said easy and delicious, I haven't quite gotten into looking for healthy choices. ;-) Hmm... that 4-grain tortilla chip sounds like it would be good too. And I have tried the shredded mexican 4-cheese mix before too. That's REALLY good. They just didn't have that at the store this time around so I went with the cheddar and mozzarella.
I've never done this before. I'll bet we would all like it. I might have to do it sometime for lunch. Hehe. Fast & easy!!

When its cold I like to make oven nachos. Turn on oven to 450 degrees. Get out glass pie plate. Arrange tortilla chips to cover the bottom. Grate monterey jack cheese, piled high and wide. Depending on what's in the fridge, maybe top with some black olives, sausage, onion, tomato, you get the idea. Shove the filled pie plate into the oven, on the top rack. Leave it alone for 10-15 minutes while answering emails. Remove (with oven mitts) and burn fingers and tongue because you couldn't wait to start eating. Mmmmm! Goes great with wine and tv.
I think you should go out and get some to cure that craving. :-)
