I love salads. I enjoy shopping for the veggies and greens, building the salad, and savoring my creations. Eating a salad every day is a great way to build vegetables (and fruit
if you are inventive) into the menu. Unfortunately, the last few of years I have been hit and miss with my daily salad habit - I still eat a lot of greens, but not every day. It is time to get back on track. When I grew my own tomatoes, basil and peppers in big barrels on my roof deck in D.C., building a heaping salad was a daily joy. I have fun, and take pride in, growing and eating my own veggies. But since moving to the country, growing tomatoes and basil has been difficult thanks to the squirrels, deer and rabbits inhabiting my property. I love the animals and want them to stay put, so I need to devise a 'work around' garden. I know I can come up with something that works, maybe an herb garden in the kitchen and tomatoes in pots!
Growing my own veggies, again, will inspire me to Make A Salad, daily (or every other day, minimum), as part of my I Resolve To . . . Challenge: 365 Resolutions For Health & Happiness. For now, I have stocked my fridge with greens, tomatoes and peppers, so I can re-iginite my daily salad habit. My plans for Spring gardening are in the works and I did my homework and learned some new things about 'why salads are healthy', and 'how to grow a critter-free garden'. I love salads too.
Kimberly that was great advice as well.
I try to remember to fix salad as a main meal more often, but I really don't want to have more then one salad a week as a main dish. Alongside, is great too.
We are eating a lot of salad. I put in broccoli, cauliflower, radishes, onions, celery, tomatoes, bell pepper, black olives, green olives, sometimes sprinkles of shredded cheese, zucchini, just about any vegetable I can find we can eat raw. Washing and storing these vegetables means in a pinch there are ready-to-eat "snacks" in the frig.
I resolve to do more on my tax paperwork so I don't freak out at the end. I need to put my head down and wade through the divorce pain I feel when I attack paper...
