When I saw that there was going to be a train cake contest, my hands started tingling in anticipation. I had never made a train cake before and this seemed like the perfect opportunity for. I love decorating cakes and cupcakes, plus my kids love trains. It was a win/win situation. My oldest two children picked out what should be on the cake and this is what we came up with:

Everything on the cake is edible.

This is a picture of the 3rd and fourth car. The yellow is the animal car that has a slew of animal cookies on top (lions, elephants, camels and koala's, oh my!). The last car is full of gum drops, stuckers and gummy lifesavers. This car does not have a 3rd wheel on the side because it runs on lollipop power. ;)

The above picture is the engine. It has a marshmellow covered in black dec a cake gel for the smokestack and a few white pieces of candy on top to act as the steam. You can't really tell from this picture but it was an coconut covered apricot log surrounded by red gumdrops on top bottom.. The second car is full of logs (Little Debbie Nutty Bars cut in half and stacked).
My oldest two dreaming of eating the cake (they'll get to dig in after dinner tonight):

National Train Day is May 10th.
