Miss Nerva's Black-Eyed Peas

Yield: 8 servings
1 lb Black-eyed peas dried
2 Leeks whites only minced
1 1/2 c Onion minced
3 tb Green Bell pepper chopped
2 Ham hocks smoked
1/4 c Olive oil
Salt & pepper to taste
1 c Chicken broth
3 c Water
Soak peas 12-24 hrs in cool water.
Drain & rinse peas.
Mix broth & water in a large pot.
Add peas, leeks onion, ham hocks & Bell pepper.
Cover & allow to stand for 30-45 mins.
Turn on heat to bring to a boil.
Add olive oil.
Season to taste with salt & pepper.
Boil for 3-5 mins. while stirring.
Reduce heat, cover & allow to simmer for 1 hr.
Remove 1/3 cup of peans then mash these.
Add mashed peas back to pot & stri well.
Serve hot.
