Potatoes & Dandelions

6 ea Potatoes cubed 1"
2 qt Basket or more dandelion greenss
1/4 c Olive Oil
2 ea Cloves garlic chopped
1/2 ts Red Pepper flakes
*NOTE:
Dandelions are FREE. If fresh picked, best before they flower.
Clean & wash greens thoroughly.
Boil potatoes in large pan for 30-40 mins.
Add dandelion greenss then continue cooking until both are tender.
Remove 1/2 of potatoes from pot & mash.
Saute garlic & red pepper in olive oil in large cast iron skillet for 1-2 mins.
Add potatoes & dandelions then continue to cook for 1-2 mins.
Add mashed potatoes then continue to cook another 15 mins.
