Caldo Verde - Portuguese Green Soup

Yield: 6 servings
1/4 c Olive oil divided
1 c Onion chopped
2 ts Garlic minced
2 c Potatoes peeled & sliced thin
2 qt Water
6 oz Chorizo diced 1/4"
Salt & pepper to taste
1 lb Kale or chard washed
6 tb Chive snipped
Trim kale or chard of thick stems then slice thinly.
Heat 3 tb olive oil in soup pot.
Add onions & garlic then cook 2 mins. until translucent.
Add potatoes & water.
Cover then boil gently over med-heat 15-20 mins.
Cook chorizo in a cast iron skillet until most of fat is rendered out.
Drain & reserve.
Mash your potatoes are done mashe them in your pot.
Add chorizo to soup.
Add kale or chard.
Simmer for 4-5 mins.
Add remaining olive oil then season with salt & pepper to taste.
Serve in bowls with chives as a garnish.
