Irish Parsnip & Apple Soup

Yield: 6 Servings
1 tb Butter
1 lb Parsnips thin sliced
1 lb Apples peeled/cored/sliced
1 ea Onion chopped
2 ts Curry powder
1 ts Ground cumin
1 ts Ground coriander
1/2 ts Cardamom
1 ea Large clove garlic, crushed
1 1/3 qt Beef or chicken stock
2/3 c Cream
Salt & pepper to taste
Chopped chives
Heat butter then when foaming add parsnips, apples & onions.
Soften this mixture but do not allow them to brown.
Add curry powder, spices & garlic then cook for 2-3 mins. stirring all the while.
Pour into stock slowly while stirring until well mixed.
Cover & simmer gently for 30-35 mins
Taste for seasoning then sieve & liquidize in ablender or processor.
Add cream & reheat but not to a boil.
Serve garnished with chives.

parsnips/turnips/brussel sprouts are my favorite
never heard parsnips with apples but will be sure to try
