It was so hot yesterday I couldn't even think of eating until close to 8 pm. I did have enough energy to put a can of tuna (unfortunately, not the good Italian stuff) in the fridge to chill, and quickly slice some potatoes to boil. It's a modified Salade Nicoise - without the HB egg, anchovies, and olives and radishes I usually put on the platter .

To make:
lightly cook fresh beans from the garden - maybe 4 minutes. Drain and dress with tarragon vinaigrette, put in fridge to cool.
Slice up a fresh red pepper in strips. Chill.
Slice potatoes and cook til JUST tender. Drain and dress with vinaigrette and chill in fridge.
Drain tuna.
Other optionals: hard boiled eggs, sliced in half
Nicoise or other black olives
anchovies
trimmed radishes
quartered tomatoes
other fresh vegetables, trimmed and sliced
Diced cold meats
Tarrgon Vinaigrette:
3 T good olive oil
3 T red wine vinegar
salt and fresh pepper
one smushed garlic clove
1 T. dried or fresh tarragon

I'll have to try your vinaigrette: I used tarragon on chicken and stews but never with evo, etc.
