I don't get a chance to watch too much TV of late....but I like to catch Top Chef occasionally. The have some crazy challenges...like making gourmet food out of the selection at the gas station. Make a canape out of junk food. Make food of the gods out of 3 items and cool whip. The chefs get pretty annoyed.
Friends.....let me tell ya. Were I a competitor, I would blow them all away. On my poor student budget...I have had to feed the masses out of what resides in my fridge....and some days that ain't much. Garlic, ketchup, fruitcake and half a banana. OR spaghetti, half a can of span, and apricot jelly. I bet you I am not the only one here.

My favorite weird concoction is cream cheese, green chiles, chopped onion, rolled up in a tortilla or on a cracker. (Don't knock it til ya try it)

I invented a delicacy at my house. Hormel can chili (with beans of course) and cheddar cheese heated in a pan then poured over Ruffles potato chips. I am telling you chili and cheese on chips is da bomb! lol

tortillas and butter are always a winner. I can make fresh ones....they are better.
i had a good crazy fridge soup invention tonite. Dry beans (cannelli), smoked turkey legs, and collard greens. Boiled them up and only added garlic and pepper. It was da bomb. The wee babies dug it and the adults and neighbors too.
Water chicken thighs cooked with carrots and a handfull of salt/pepper 'n seasonings make a great soup, after it is done cooking I remove the chicken alow it to cool a moment, shred the meat and add it back into the pot and then throw the skin and bone into the garbage.
(legs deboned work well, if you've got the time, but not the cash), a large can of tomato juice, a can of diced tomatoes, and a large onion cut up, if you have a removable crock, heat in microwave to almost boil (for a headstart, since beans are dry), throw in the crock pot in the AM, ready for supper, and low fat. Serve with cornbread or garlic bread or whatever.

or if I have a mish mosh in the fridge I'll make a casserole and put the cheese on the top...anything with melted cheese my kids will eat in a heartbeat! LOL

And Shannon....mm that sounds good. I don't know if any of you remember government cheese days.....but that was some good-bad stuff and sounds like Shannon could whip up something great. (Though it was a little tought in the cutting/melting dept. It was good stuff)
I like vaqueros with my habeneros....both are yummy. And cup o noodles....where would we be without ye?
