slow cooker chicken minestrone
1 lb chicken - 16 points
6 cups water - 0 points
1 onion, chopped - 0 points
1 tsp salt - 0 points
1tsp thyme - 0 points
2tsp parsley - 0 points
1/4 t pepper - 0 points
1 can (16 oz) diced tomatoes - 1 point
1 zucchini thinly sliced - 0 points
16 oz chickpeas, drained - 6 points
2 cups chopped cabbage - 0 points
1 cup elbow macaroni, uncooked - 6 points
1/4 cup parmesan - 2.5 points
in a slow cooker, combine chicken and water, onion, salt, thyme, parsley, pepper and tomatoes. cook on low 7-9 hours. remove chicken and shread. return to pot. turn to high. add zucchini, beans, cabbage and macaroni. cover and cook on high for 30-45 minutes, or until veggies are tender. sprinkle with cheese.
total points - 31.5

i plan on making it with potatoes instead of zucchini, which will add 6 points and make it about 9.5 points per serving.
