Since Splenda arrived on the dietary scene back in te mid-1990's it has become the sweetener of choice for diabetics, those seeking a way to cut calories & mom's with sugar-intolerant kids. This sweetener is not an artificial sweet chemical but rather a natural waste product from the refining of sugar. It is actually sucralose, a natural non-nutritive part of sugar that is removed during the refinement process and has had 3 hydrogen-oxygen chains replaced with 3 highly stable chlorine chains. Sucralose is then combined with small amount of maltodextrin to give it bulk & packaged with the brand name, Splenda. Unlike its counterparts the aspartame-based synthetic sweeteners it does not break down when subjected to heat so it is safe to use in cooking.
In this great book Marlene Koch covers a world of cooking using Splenda in 160 recipes that all are delicious, low-cal, sugar free & safe for diabetics & non-diabetics alike. Names for recipes such as Orange Creamsicle Frappe, Lemon Cottage Cheese Pancakes, Oatmeal Muffins, Creamy Poppy Seed Dressing, Spicy Teriyaki Sauce & so many more make your water just to read the index much less make & eat these wonderful concoctions. She covers the gamut from beverages to condiments & everything in between!
Nutritional information is covered as are dietary & nutritional tips, guidelines & diabetic exchanges in each recipe. The way & reasons that Splenda works for you instead of against you in your metabolism is covered as well. As with her previous Splenda-based books Marlene Koch has yet another winner for all of us who eat, need to watch what we eat & eat healthy.

Thank you for this article post... I really do not use Splenda myself... unless I have been given samples of it... My mom uses Sweet n Low.. Her choice.. As a diabetic I should use more sugar subsititues but I do not really... My bad... :) But For the most part when ever I have had anything with it... It is okay.. But that is just my own preference...
Now with that said... I am featuring this in the Features Section of Type 1 Diabetics, this way other Diabetics/members of that group can see it more proudly shown... :)
