The holiday season is upon us. We all love the food and the time with our families. Often, it can be difficult to spend as much time with family as we would like to because we have to cook the meals. One solution is to use that wonderful appliance known as the crockpot or slow cooker. This is a great recipe. Everyone will enjoy it and you will have more time to spend with those you love.
Crockpot Berry Cobbler
3 cups berries (I use frozen just out of the freezer or fresh)
1 cup sugar
1/3 cup water
1 tsp lemon juice
1c Bisquick mix or homemade quick mix
2 Tbsp sugar
1/3 cup milk.
Mix berries,1/2 cup sugar, water and lemon juice. Cover and cook on low 3-4
hours (if I use the berries frozen, I start on high until the berries start to cook then turn down to low) or until boiling. Mix Bisquick or quick mix, 2 Tablespoons sugar and milk. Drop dough in 6
spoonfuls onto top of hot berry mixture. Sprinkle with cinnamon, cook another 20-25 min on high.
You Can use raspberries, blackberries, rhubarb, whatever fruit you have on hand..
I have also used canned pie filling eliminating the fruit, 1/2 sugar, lemon juice and water. I love making it with fresh rhubarb from our garden.
