From one basic ground beef recipe, I make meatloaf and meat balls in one day and freeze them for future use. I bake the meatloaf in smaller size pans. This is only because our household consists of 2 people. But I make 3-4 small pans so that I can share with some of my elderly friends that are alone. The meatballs are formed by using a melon ball scoop so that they are of uniform size. They can be used in spaghetti sauce or for meatball hoagies. I also use these meatballs to later shape into medium sized cooked shells for stuffed shells. So quick and easy. Just defrost the amount of meatballs you need for the shells. Shape to fit into the shell and add your favorite cheese and sauce before baking. (The meatballs are partially cooked before freezing as well as the meat loaf.) To freeze the meatballs spread them on a cookie sheet and freeze. Once frozen, remove them from the cookie sheets and freeze in Ziploc bags. That way you can take out just the amount you need.
