While cooking or baking for family meals or special occasions we sometimes find that we don't have one of the ingredients called for in the recipe. Rather than totally changing the menu or making an unnecessary tip to the store, some of the following substitutions may be helpful
Missing Item Substituion
1 C buttermilk 1 C milk plus 1 tsp vinegar
1 oz baking chocolate 3 T cocoa plus 1 T shortening
1 C cream ¾ C milk plus ½ C Butter
1 C brown sugar ¾ C granulated sugar plus ¼ C molasses
1 C butter 7/8 C vegetable oil
1 C dark corn syrup ¾ cup light corn syrup plus ¼ C molasses
1 tsp cream of tartar 1 tsp vinegar
1 C butter 1 C shortening
1 C sour cream 1 C evaporated milk plus 1 T lemon juice
1 C bread crumbs ¾ C cracker crumbs
1 T cornstarch 2 T flour
1 C granulated sugar 1 1/3 C powdered sugar

1 tsp cornstarch plus 1/4 cup water = 1 egg
2 egg yolks plus 1 Tbsp water = 1 egg
2 Tbsp corn starch = 1 egg
2 Tbsp arrowroot flour = 1 egg
2 Tbsp potato starch = 1 egg
1 heaping Tbsp soy powder + 2 Tbsp water = 1 egg
1 Tbsp soy milk powder + 1 Tbsp cornstarch + 2 Tbsps water = 1 egg.
1 banana = 1 egg
Many recipes call for egg whites not whole eggs instead of throwing out the yolks they can be saved for a short time in small container and used in this or other ways.
If you can get your hands on a Fanny Farmer cook book it lists a ton of substitutions and conversions as well as other usefull information that I never knew and have referred to many times before the fire. Unfortunately my Fanny fell victime to the fire and has not been replaced yet.
