Although supermarket shelves are stocked with a wide variety of quick cooking rice products, the convenience seldom justifies the inflated price tag. For this reason I cook rice in larger than needed quantities and store the planned leftovers in small packages in the freezer. The rice thaws quickly in the microwave or can be added directly to some foods without thawing.

Fried Rice
Spanish Rice
Vegetable Rice Casseroles
Meatballs
Meat loaves
Beef and Rice Burritos
Chicken and Rice
Rice Pudding
And you can always serve rice with leftover meat and gravy, stir fries or chicken ala king

I'm not computer savvy enough to be of much help. I sometimes have problems publishing, but after the first few times I lost articles, I started writing my pieces in Word and cutting/pasting into gather. That way if the article doesn't go through it only takes a moment to try again. Keep trying.
6 beaten eggs
2 cups cooked rice
1 cup milk (I use half and half)
4 oz crushed pineapple (drain juice and set aside)
1/4 cup sugar
1 pie shell
Beat together eggs, milk, and sugar, and 1/2 of the pineapple juice.
Place rice into pie shell, pour egg mixture over it, scatter pineapple across the top, bake at 350 for 30 minutes
brush, or drizzle remaining juice over the top of pie bake for 10 minutes. cool at room temp, then refridgerate.
Serve cold.
Besides stir fries and other dishes, I also use it to make rice puddings
Marsha, in Cuban culture rice is also a staple - lunch and dinner almost every single day in some way or another....and sometimes even dessert (rice pudding, which I love!)
And on my article problem, I guess I will keep trying. i have tried now about 8 times and am a little frustrated. Ok...a lot frustrated!
I'm not sure if we have such an animal as a discount appliance store, but I might check on amazon.com (I have some gift certificates from there).
The rice cooker I have is actually just an insert to one I my steamers (bought at a yard sale for $2.) It only makes about 3 cups. I have 3 steamers, all yard sale purchases. Can't you tell I'm a compulsive gadget collector.
Would you mind posting a good recipe using the rice to make spanish rice.
I'll try to do that later on this evening.
