recipie at bottom of page in my comment...
Have you ever passed by a recipie and said ,,,darn it I am only missing one ingredent!!! thinking out loud my son overheard me... for years I have been passing by recipies that call for'"plain yogurt" I never buy it or do I ????
My sons comment mom we have a fridge full of it!!
Huh???? Why have this never accured to me we always have flavored yogurt in the fridge or( fruit on the bottom>tranlastion plain yogurt.)..I just had to give my son a hug I was so happy ..off to try the recipe on the oatmeal box....uh oh measuring the oatmeal to see if I had enough just shy of a forth cup ... My son pulled out the Instant oatmeal, Will this work ?? My comment, I don't know if it will taste the same the oatmeal is different ...But we can give it a try..Instant Oatmeal to the rescue..we used 1 pkt apple and 1 pkt of peach with peach fruit on the bottom fruit included..
I have to tell you they were the best oatmeal bars I have ever tasted,the added fruit from the instant oatmeal and yogurt made it so different,and oh so yummy......
Has this ever happened to you??? I would love to hear your comments....

Your son is a budding chef!
People are afraid that it will turn out "wrong"
One of the best things I ever made was because of a sale on plums. Honey, garlic, roasted jalepenos, ginger, and a porkloin. Everyone said I was crazy. It sounded good, ans it was. I think you and your son figured out the key to great cooking, you had the fundamentals, and he gave you what you needed to apply them.
More of us need to look in our cupboards, and see what hidden treasures lie in something as simple as instant oatmeal. Way to go.
3/4 cup brown sugar................1/2 cup granulated sugar
1- 8 oz. container vanilla or plain low-fat yogurt .....
(I made a double batch so I used two of my favorite flavors of yogurt........2 8 oz containers of yogurt ( I like peach and mixed berry) any will do.....
2-egg whites lightly beaten
2 Tbsp. Vegetable oil
2 Tbsp. fat-free milk ( I used 1% )
2 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (optional)*
3 cups of Quaker Oats (Quick or old -fashioned,uncooked)
*******SUBTRACT reg.oatmeal AMOUNT TO MAKE UP FOR THE SAME AMOUNT FOR instant oatmeal pack......single batch=1 pkt.
double batch =2 pkts.************ To make my good blunder....................
1- cup of diced dried mixed fruit,raisins or dried cranberries
********I used 1 3/4 cups of raisins (and the applesand peachs from the Instant Oatmeal gave it extra flavor. )******************************************************************************************************************************************
1. Heat oven to 350 .. In a large bowl,combine sugars,yogurt,egg whites,oil,milk, and vanilla; mix well..
In a medium bowl,combine flour,baking soda,cinnamon and salt;mix well
Add to yogurt mixture; mix well..Stir in Oats and Fruit.
2. Spread dough onto bottom of 13 x 9 inch baking pan
3.bake 28 to 30 minutes or until light golden brown.Cool completely on wire rack Cut into bars. Store tightly covered...
I have a huge double pan that I use,or a ex-large square cookie sheet woorks well( that has sides.)
I hope everyones comes out as good as mine would love to hear your comments and/or things you have used to make this recipie even better......
