ROASTING PUMPKIN SEEDS
When you scoop seeds to make a Jack o'lantern or to make pies you can wash and then dry the seeds on several layers of paper towels and later roast or toast in a cast-iron skillet or in the oven and eat as a tasty snack.
Salt can be added if you wish.

William, they are real good and sometimes I like to add them to a pumpkin or one of the winter squash soups for texture

I like leaving little bits of pumpkin flesh still on the shells. All the fruit sugars caramelize in the heat, and that adds a little flavor sensation to the process of biting through the shells.
