. Stage meals. First make sure you have everything you need and get all of the ingredients handy; chop whatever you need to chop, wash anything that needs washing, and get it all in front of you before you get in front of the stove.
This will save on legwork, from forgetting stuff, and tiring out, etc.

Also, it seems to go so much quicker when you have everything prepped in front of you
I'll go in the kitchen and locate everything I need and put it on the counter. A little while later I will go in and do the actual prep work, things like chopping the onions, peppers etc.
Then later when its time to cook I go back in the kitchen.
After work, when I sometimes don't feel like cooking, taking little breaks at each stage makes it feel like not so much of a chore! I love to cook, and I want it to stay enjoyable for me!

I am sometimes up at 5-6 am to get things in order, sometimes my kids say when they wake up mom whats for dinner or, my hubby will joke um it's breakfast time,I am usually "entering zombie stage" when it is time to cook dinner..
I have done that before theres nothing worse than being short of a measurement for something, or a huge main ingredient that you need...so I pre-pare early and make sure I got everything for that dish.
