I am so excited that it is finally starting to warm up. It got up to 57 degrees today. LOL Ok that is not really warm but compared to what it has been, it is a welcome change. I just can not wait for summer. I love family picnics and family reunions. I love to visit with family and I love good food. Seems family is a great place for good food. I thought that this may be a good time to share a recipe with you. This is a great and easy recipe. You can make it ahead of time as it gets better as it ages. It is perfect at a day old. Yummy. Hope you enjoy it and remember no recipe is ever final until you have changed it a few times to adjust to your families tastes. This is a really old recipe and has been passed down for several generations. I have changed it to our families tastes. Please share any changes that you make with me so I can try them too. Quick Hawaiian Cake
In a bowl mix the following:
2 cup all purpose flour
1 cup. White sugar
1 cup brown sugar
2 tsp. baking soda
Dash salt
1 tsp cinnamon (I sometimes use almond extract)
Mix well and add in:
1 large can of undrained crushed pineapple
1 cup flaked coconut
1 cup chopped walnuts
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 cup apples
1/2 cup shredded carrots
Preheat oven to 350 degrees. lightly grease a 9" x 13" baking pan
Mix together well and pour into prepared pan. Bake in
oven until a toothpick comes out clean (30 to 45 min). Let cool and
frost with vanilla or cream cheese frosting, or sprinkle with
XXX sugar just before serving.
A great one to make ahead and freeze for when you need a quick dessert.
It's also great picnic fare. Quick, easy and tastes really good.
