Lunch time again – What should we have today. There's always that last piece of meat loaf and the odds and ends of vegetables. And how about the last of that open can of tomato sauce
I put a bit of the tomato sauce in the bottom of a loaf pan covered it with chunks of meatloaf and sprinkled it with the last of the leftover chopped spinach. Gotta have a little cheese, so I added a little shredded mozzarella and shredded cheddar from the bottom of those packages. I stirred a pinch of brown sugar into the sauce, poured it over the meat, seasoned with garlic, basil, oregano and black pepper and baked for about 25 minutes. We also had about 1/3 cup each of green beans and waxed beans which I mixed together and seasoned with butter, garlic and pepper.

How do you always have leftovers and nothing is new? I never have part of a can of this or a slice or two of that. Maybe it's because I have kids around the house all the time.
There are only two of us. Any one pound can of vegetables is enough for three and smaller cans are more expensive. When I open a can of sauce, I use a bit and put the rest in a container. I cook rice and potatoes in quantity and never cook a single meatloaf, roast or chicken. And sometimes we just eat smaller amounts than I expected.
