Dairylicious Breakfast Taco

Your family is looking for a healthier, tastier breakfast, and you need to offer something suited to the morning rush. Take inspiration from Mexico and the Southwest!
The night before, prepare the vegetable filling and store in a covered glass bowl. Dice tomatillos or tomatoes and avocado. Shred some romaine lettuce (the darker green color makes it richer in vitamins than iceberg) and chop some cilantro or flat-leaf parsley. Squeeze in some fresh lime juice and toss together. In the morning, toss again with a bit of salt.
In the morning, fill crisp taco shells with slivers of your favorite cheese. Jack always works. Some like cheddar. I like to use muenster. Each person should have at least an ounce of cheese either in a single shell, or preferably, in two shells. Sprinkle to taste with your favorite hot sauce. (I like Cholula.) Put the shells on a platter and microwave on high for a minute, or until the cheese melts.
Set the shells on individual plates and fill with the vegetable mixture. Enjoy immediately.
With it, enjoy a Mexican-flavored latte. Put 3/4 cup milk per person, preferably whole, in a saucepan and add a stick of cinnamon. Simmer for 10 minutes and then refrigerate overnight with the cinnamon stick still in it so the flavor infuses.
In the morning, measure 3 scoops very finely ground coffee for each person, preferably expresso, into a saucepan. Add 1/2 cup water per serving. Bring to a boil, turn off heat and let rest a few minutes. Pour mixture through a paper or Mexican cloth coffee filter. Reheat the milk with cinnamon from the refrigerator. Divide coffee among mugs and add milk. Sweeten or not to taste.

Middle Eastern breakfasts include sliced tomatoes and cucumbers. My niece, who like most grew up on cold cereal and hates it almost as much as I do, recently came back from a trip to Turkey utterly thrilled with the sliced vegetables for breakfast.
Would you find unappetizing the broiled tomato so often offered on the traditional British breakfast plate?
Normally I have oatmeal cooked in juice and skim milk with wheat germ and raisins for breakfast. I let it cool more on hot days, otherwise it is the same every day except for the flavor of the juice. (currently V-8 Fusion - double good!)

That being said, I can see where some people are turned off by the idea of a breakfast taco but would probably be willing to eat a breakfast burrito stuffed with eggs, bacon and sauteed spinach.
My suggestion, then, would be to substitute the romaine lettuce with a sauteed spinach, perhaps, and see if this is more palatable to more people. Also an option to have a soft tortilla vs. a crisp shell might go over better.
