1/4 lb cheddar, Velveeta, or other cheese of choice, cubed (not sure of halal status of Velveeta cheese?)
1/4 lb sliced roast beef (another meat could be substituted, or you could omit meat altogether)
1/2 cup broccoli florets
1/4 cup bean sprouts
1/4 cup shredded carrot
1 tbsp sliced green onions
8 tomato slices
2 whole wheat pitas, cut in half
plain yogurt
mustard of choice
Heat oven to 350 degrees. Toss the cheese, meat, broccoli, bean sprouts, carrots, and onion together. Fill each pita bread half with 2 tomato slices and 1/2 cup cheese mixture. Wrap each sandwiche in foil, bake 15 minutes, or till cheese melts. Serve with sauce made from yogurt and mustard.

Although I admit I really don't try to eat beef very much anymore, due to 'Mad Cow', and a digestive system which just doesn't like meat very much anymore, generally. I'm sure this would be just as good with some other kind of meat, or even some 'veggie deli slices', to replace the roast beef?
I've noticed they are coming up with some pretty good 'fake meat' these days. Had some 'chicken patties' the other day, that tasted just like the real thing! (even though they actually had no chicken in them at all - the explanation of ingredients said they were made out of some kind of rare 'fungus'. Sounds gross, but tasted good.)
