1 large sweet potato (about 12 oz) peeled and cubed
1 red or green bell pepper, diced
1 small onion, minced
2 cloves garlic, minced
1 tsp ground cumin
8 oz chopped fresh collard or turnip greens (about 4 cups)
hydrogenated or soybean oil
5 cups (40 oz) defatted low sodium chicken broth (or regular, or vegetable broth)
12 ounces cooked turkey breast, diced
1/2 cup (4 oz) bottled hot salsa
6 oz fresh or frozen okra, cut crosswise into 1 inch slices (about 1 cup)
1/4 cup chopped fresh cilantro
Spray a large saucepan with cooking spray and place pan over medium high heat. Add sweet potato, onion, pepper, and garlic and cook, stirring, for 5 minutes. Sprinkle with cumin and cook for 1 minute. Add collard greens, 1 handful at a time, stirring until each addition wilts. Stir in broth, turkey, salsa and okra, and bring to a boil. Cover, reduce heat, and simmer 10-20 minutes or till okra and greens are tender. Remove from heat and stir in cilantro.

Sounds real tasty, so does the Almond milk. never really discussed Halal food, but sounds real good anymore recioes?

I've have THOUSANDS of recipes I've been collecting over the years, I'm hoping to add as many as possible to this page, as time goes by. (at least that way, someone's getting some use out of them, and my efforts havent been all in vain, as I'll probably never actually use more than a quarter of them!) Of course, that could take YEARS!
If you want to know more about halal food, (permissable according to Islamic guidelines), I posted some articles that give a basic explanation, yesterday. ..
I'm leaning towards vegetarianism and a raw foods diet, these days, but these recipes reflect years of collecting, while I went through various 'food phases', so there should be something for everyone...
