Preheat oven to 350
Another great recipe that is not dry but does have any oil in it.
1 cup minus 1 TBSP all purpose Flour
1 cup minus 1 TBSP course corn meal
3 tsp baking powder
1/2 tsp salt
1/3 cup sugar
2 large or 3 medium eggs
1 1/4 cup buttermilk or sour milk(if you do not have any butter milk add 1 TBSP vinegar or Lmeon juice to regular milk and allow to sit for 10 minutes before using. Butter and sour milk combined with Baking power increase the leavening power, but also results in a moister product..the milk I mean.
Combine all dry ingredients thoroughly, then beat in the eggs and and milk until batter is no longer lumpy. Pour into greased 9 x 9 pan and place in preheated oven. After the first 10 minutes turn the heat down to 300 and continue to bake for another 15- 20 minutes or until an inserted tooth pick no longer cmes out GOOEY. Chant with me, if the bread pulls away fromt he side of the pan, and the tooth pick comes out CLEAN the bread will be dry. Crumbs clinging to the tooth pick are fine! My youngest can no longer have cow's milk so I have made "sour milk" with Soy milk and it came out just fine!
