I love this recipe because there is NO oil in it and it still comes out moist!
This is not super sweet, so if you want a sweeter bread in crease sugar to 3/4 cup and decrease flour by 2 TBSP, or try using brown sugar instead of white.
Combine flour, sugar, salt, baking soda and baking powder. Add eggs, mushy bananas and vanilla and stir or beat until most large lumps are gone. Pour into a greased bread pan or 9 x 9 baking dish. Bake at 350 for 15 minutes and then turn heat down to 300. Continue baking for another 15-20 minutes or until inserted fork or tooth pick no longer comes out GOOEY. Having crumbs cling to it means it is still moist and if the bread has pulled away from the pan and toothpick comes out CLEAN, guess what, it;s going to be DRY! Pass the MILK! Yes, it takes more watching to get moist cakes and quick breads but it is SO worth it.
*Instead of shopped nuts try stirring in 3/4 cup chocolate chips!
Also if you want to use whole wheat flour you will have to decrease the amount of flourby about 1/4 of a cup...for some reason wheat flour just sucks up the moisture in a recipe.
