I could not find a recipe that combined what I had on hand: fresh canned peaches, pears, Bisquick, buttermilk and almonds, so I made up my own.
1 1/2 cups each: sliced fresh canned peaches and pears
1/2 cup brown sugar
1 T cornstarch
1/4 t salt
2 t vanilla or almond extract
Biscuits
1 cup baking mix
pinch of nutmeg
1 T melted butter
1/3 cup buttermilk
2 T slivered almonds
Preheat oven to 375°F. Spray an 8" square baking dish with cooking spray. Place the fruit in the prepared pan, alternating each.
Mix sugar, cornstarch and salt; sprinkle over fruit. Sprinkle with extract.
Place in the oven and bake 15 minutes.
Meanwhile, in a medium bowl, combine baking mix, nutmeg, butter and buttermilk to make a thick dough, adding more baking mix if needed.
Remove pan from oven and drop biscuits onto the hot mixture by the tablespoon. Bake for an additional 25 minutes or til the biscuits are golden brown.
Served warm with whipped cream. So yummy!
