I am New York Italian. I am from the Bronx. In the wake of fast food, pizza has become, for lack of a better word, yucky. Grease is an important part of pizza. Hot is an important part of pizza. If my pizza is reheated, I won't eat it. Now, here's the crime. Pizza cookies. What is pizza cookies? I'm glad you asked. Pizza cookies is any preprepared dough. Flat cracker-like crust is not pizza. Ready made pizza is the same as I didn't have time to make this special for you, so here it is: soggy and in the box.
Finally, and most importantly, the proper way to eat pizza. The freshly made dough must be hand tossed. Why? I don't know. It is important though. Now when you get your pizza in hand, please do not eat it with a fork. Fold your pizza in half and shove it quickly into your mouth. It the hot greasy cheese oozes out of the folded pizza on fresly made dough, and cooked to a dark crust without burnt cheese, and you burn your tongue because you couldn't wait, you just had real pizza.
Thanks for listening and getting hungry.

Number one, I am from the Bronx and number two, a pizza fanatic. I wrote an article on Gather amost two years ago about the food of the Gods. There is a pizza tour of Brooklyn and my wife and I made the pilgrimge. The story is called, Dem Pizza Bums and you can find it by searching that name.
We now live in South Florida and my son used to say that the worst pizza in New York is better then the best in florida.
