
Hello one and all!
I hope your summer has been pleasant and temperate! I know many of you have school age kids that are most likely back in school this week. Having a good freind who has a 7 year old and is herself a school teacher, I thought it would be nice to post an affordable, easy and healthy dinner recipes.
This week Chicken:
So here is Flakey Spud Chicken:
Ingredients:
- 1-2 T. butter
- 2-3 chicken breasts, cut in strips
- 2 eggs
- 3/4 c. instant mashed potato flakes
- 1/4 c. Parmesan cheese
- 1 t. garlic salt
- 1/4 t. pepper
Directions:
- Preheat oven to 350 degrees. Slice butter and place along bottom of glass baking dish.
- Put dish in oven until butter has melted and coated bottom of pan.
- While butter is melting, beat the 2 eggs in one bowl and in another bown combine potato flakes, Parmesan, garlic salt and pepper.
- Dip chicken pieces first in egg and then coat in potato flake mixture. Place in buttered dish side by side.
- Bake uncovered for 25-30 minutes (until chicken is cooked and flakes are looking golden and crispy on the edges).
Add a bowl of veggies or a nice tossed salad and you have agreat, easy, FAST dinner.

Lemon Pasta Chicken:
Ingredients:
-2 T. cornstarch or flour
-1 3/4 cups chicken broth(1 can)
-2 T. lemon juice
-1 T. Dijon-style mustard
-1 lb. skinless, boneless chicken breasts, cut into strips
-2 cloves garlic, minced
-3 T. chopped fresh parsley OR 1 tbsp. dried parsley flakes
-4 cups hot cooked thin spaghetti
Directions:
MIX cornstarch, broth, lemon juice and mustard.
COOK chicken and garlic in nonstick skillet until browned, stirring often. Remove chicken.
ADD cornstarch mixture. Cook and stir until mixture boils and thickens. Return chicken to skillet and heat through. Stir in parsley. Toss with spaghetti.
