I never have good ideas on what to bring to a potluck. We are having one next month at work. I need to sign up for something. Any ideas? What's your favorite thing to bring or eat at a potluck?
I say stick with an entree, because you'll see that the desserts usually out-weigh the entrees 2 to 1, because they are typically easier to make or buy prepared.
Meatballs are a good one.You can do so many easy sauces for them.
I like to bring homemade mac and cheese. It's pretty easy and it's so yummy! Or you can always bring snacks or desserts if you don't feel like cooking. Or soda maybe?
A pot of beans or a big batch of spaghetti are always good. Or a big green salad with all the fixin's such as lettuce tomato, cheese, egg, carrots, cucumber, bacon bits, etc. Add the dressing to the whole batch right before setting it out or take the bottle and put it next to the salad on the table.
At ours Chicken and dumplings or stop by a fried Chicken fast food place and get a big barrell of chicken. Beans with hamburger meat , onions , rotel tomatoes and chili powder.
I made a big crockpot full of "Overstuffed Mashed Potatoes" for our Thanksgiving lunch at work last week. Out of about a gallon of mashed potatoes, there was only a 1/2 cup left.
Red potatoes, eyes cut out but peeled (check for green skin and peel those parts until the flesh is completely white--green potato skin/flesh is poisonous) Bacon Heavy whipping cream Cream cheese Kosher salt White pepper powder Green onions
Boil potatoes in large pot with a little salt until soft but not falling apart. While potatoes are cooking, fry bacon then drain until crisp. Crumble and set aside. When potatoes are tender, drain and mash roughly in large bowl with wooden spoon. Sprinkle with a little more kosher salt and white pepper powder and mix, start adding cream until potatoes are the consistency you want. Butter the inside of the crock and layer 1/2 potatoes, cream cheese, 1/2 potatoes and bacon on top. Add 1 stick butter, cut into 1/4's to crockpot. Cook on HIGH 3 hours. Around 1 hour before serving, stir thoroughly to incorporate all ingredients. Serve chopped green onions on the side for those who like them.
When I made this, I used 5-6 lbs red potatoes, 1 qt. heavy whipping cream, about 1 TBsp. kosher salt and white pepper powder, 1 stick butter and 8-10 good size green onions. We fed about 50 people. Delish!
Chicken wings, Terryaki chicken over rice, pepper stew, Chili, Stroganoff, Pot Roast, Bean soup, Pasta, home made salsa, bean soup, sandwich stuff, and deserts.
Meatballs~ You can make you own from scratch. Or even easier, buy a frozen bag of them. Our Walmart carries a bag of 80 for $3.00. Then add a bottle of your favorite bar-b-que sauce. Put all of this in a slow cooker, that you can take along. Or after fixing them, put them in a cheap foil throw away pan.. For our meatball sauce this is what we do. In the slow cooker, add catsup and jelly. About a cup of catsup and 1/4 to 1/2 cup of jelly. Once the jelly has melted. Add your prepared meatballs..

pulled pork in a crock pot........chicken and dumplings.....in a crock pot..... most anything that should be served warm will work really well in a crockpot.........chicken and yellow rice is another good one.....
Put a pork loin roast in a crockpot, pour a can of refries on it, and a full jar of salsa. Cook it until it falls apart. It is excellent over potatoes, rolled up in tortillas, served in a crisp shell.
