I never have good ideas on what to bring to a potluck. We are having one next month at work. I need to sign up for something. Any ideas? What's your favorite thing to bring or eat at a potluck?

Meatballs are a good one.You can do so many easy sauces for them.
THE POINTS DEPOT
some faves of mine are those lil cocktail sausages made with jelly and salsa or sausage cheese dip
Red potatoes, eyes cut out but peeled (check for green skin and peel those parts until the flesh is completely white--green potato skin/flesh is poisonous)
Bacon
Heavy whipping cream
Cream cheese
Kosher salt
White pepper powder
Green onions
Boil potatoes in large pot with a little salt until soft but not falling apart. While potatoes are cooking, fry bacon then drain until crisp. Crumble and set aside. When potatoes are tender, drain and mash roughly in large bowl with wooden spoon. Sprinkle with a little more kosher salt and white pepper powder and mix, start adding cream until potatoes are the consistency you want. Butter the inside of the crock and layer 1/2 potatoes, cream cheese, 1/2 potatoes and bacon on top. Add 1 stick butter, cut into 1/4's to crockpot. Cook on HIGH 3 hours. Around 1 hour before serving, stir thoroughly to incorporate all ingredients. Serve chopped green onions on the side for those who like them.
When I made this, I used 5-6 lbs red potatoes, 1 qt. heavy whipping cream, about 1 TBsp. kosher salt and white pepper powder, 1 stick butter and 8-10 good size green onions. We fed about 50 people. Delish!
