2 sticks of soft butter

3 cups of peanut butter

2 lb confectioners sugar

2 tsp vanilla

        Roll into balls about the size of a small walnut,store in covered container overnight.

Melt 12 ounces of semi-sweet chocolate and 1/2 cake of paraffin.Dip balls (using a tooth pick)into chocolate ( do not coat the entire ball).Place on waxed paper......Let Cool...

 Yummy !!!

I love this kind of candy! We did not call them buckeyes but it is similar to our peanut butter Easter eggs! I guess you would not want to add it to my healthy recipe exchange group, although the recipe can be made healthier and still be tasty! My favorite!

ok. Do I have to invite you or are you able to join? I have heard of slight changes that can be made, like using powdered milk, flax seed, or wheatgerm to make it healthier. I know peanut butter is good, and chocolate has antioxidants too!

I substitute a healthy, polyunsaturated oil for all or part of the butter. This may make it less firm, but you can add half the butter. I learned the hard way, not to use margarines that are mostly hydrogenated fats and make your cholesterol go up even without containing cholesterol! Most recipes I try and use less sugar and fat. I also like it with crushed cereal, like the leftover cereal at the bottom of the bag! These crumbs make a good fat substitute for pie crusts too. I use them in pumpkin pies and add them to peanut butter candy to make it thicker! Since the oil does not solidify like butter or margarine. If you refrigerate the candy , it will get thicker.

I understand. It is also very filling, which does have a place in keeping people satisfied. I read a very interesting article recently, explaining the differences in sweeteners. It seems as though one of the biggest reasons for the obesity of Americans, is the snack and soda industries switching to high fructose corn syrup instead of pure sugar! High fructose corn syrup is stored as fat, not burned off like sugar. It messes with our minds, so instead of feeling full, we still feel hungry.

My cousin always makes these for reunions and any other gathering we are all at. I don't know what recipe she uses but hers are great. This recipe sounds delicious.
