Alyssa's Comfort Food - Lemon Squares

My daughter will be stopping by tomorrow night, on her way from Texas back to North Carolina.  She's a captain in the Air Force, a C-130 pilot with five tours to the desert on her resume. 

She's been in Texas since January, training for an instructor pilot slot, but health problems have changed the situation, so she's not happy.  And trust me, when Alyssa is not happy, no one is.  So when I heard from her yesterday that she's passing through, I thought it best to make her favorite comfort food.  That's what moms are for.

Lemon Squares

Preheat oven to 350 degrees and grease an 8x8 pan.

Cream together a stick of butter or margarine, one fourth cup confectioners sugar and one cup flour. Press into the baking pan with a little edge up the sides. Bake for 15 minutes.

In a blender, mix two eggs, two tablespoons of lemon juice, one cup sugar, two tablespoons of flour and one half teaspoon baking powder.  Whirl away til it's creamy smooth.  Pour onto baked crust and return to bake for another 15 to 20 minutes.  Cool and sprinkle some powdered sugar on top.  Cut into squares and enjoy. 

I hope this makes Alyssa and y'all happy!

These sound like "Lucy's Lemon Squares," from a cookbook from the Peanuts Gang (Peanuts-Charles Shultz) that my mom got me when I was about 5 or 6. I used to love to make them. Thank you Faith that brought back fond memories.

Faith, you had better put 911 on your speed dial. Tonight, my brother is over from Tallahassee and, I made a succulent stuffed pork loin with sage sausage and dressing, basted with a red wine and garlic sauce sliced and served with a blackberry reduction sauce, made with fresh blackberries pick just this afternoon.(I made this up tonight and was a great taste combination) A spinach au gratin cassarole and of course the southern favorite mash potatoes and gravy, all made from scratch. I think when my sister, and two brothers and niece and nephew when back for thirds, its was okay to eat. Thanks for the comment. I do cook a little.

David, that menu sounds incredible! It makes the pork chops with sauteed apples I made tonight sound downright bland. Have to try a blackberry reduction sauce the next time I see them at the market.

Ah...Lemon Bars are as Southern as Cheese Straws and Sweet Tea. Thanks for the recipe. We love lemon, so I think I'll mix a little lemon juice with powdered sugar and drizzle over the top instead of just plain powdered sugar. That's up the lemon quotient -- the way we like it.

Great recipe! I have been looking for the Lemon Square recipe my grandmother used to make for years now. I found many, but never quite the same. I hope this will be the one!
