My daughter will be stopping by tomorrow night, on her way from Texas back to North Carolina. She's a captain in the Air Force, a C-130 pilot with five tours to the desert on her resume.
She's been in Texas since January, training for an instructor pilot slot, but health problems have changed the situation, so she's not happy. And trust me, when Alyssa is not happy, no one is. So when I heard from her yesterday that she's passing through, I thought it best to make her favorite comfort food. That's what moms are for.
Lemon Squares
Preheat oven to 350 degrees and grease an 8x8 pan.
Cream together a stick of butter or margarine, one fourth cup confectioners sugar and one cup flour. Press into the baking pan with a little edge up the sides. Bake for 15 minutes.
In a blender, mix two eggs, two tablespoons of lemon juice, one cup sugar, two tablespoons of flour and one half teaspoon baking powder. Whirl away til it's creamy smooth. Pour onto baked crust and return to bake for another 15 to 20 minutes. Cool and sprinkle some powdered sugar on top. Cut into squares and enjoy.
