This is a very simple and hearty rice and shrimp dish with a Creole kick.
Super Simple Creole Shrimp and Rice Dish
Cook 2 1/2 cups of rice either on the stove top or in your rice cooker.
Other ingredients:
3 tblsps. olive oil
1 medium onion sliced small
1 medium green pepper chopped
2 8oz cans tomato sauce
1/2 bay leaf
8 oz of uncooked shrimp with out the tails
1/2 tsp. sea salt
1 pinch pepper
Cayenne pepper flakes to taste
Add the olive oil to a large frying pan, add the onions and green pepper and saute them for a couple of minutes until tender. Add the tomato sauce, bay leaf, shrimp, salt and black pepper, and simmer for about 10 minutes. Slowly stir in the cooked rice and heat until everything is hot, add the cayenne pepper to your taste.
Serve right away.
Budget tip: If you are on a tight budget get the frozen salad shrimp they are small but often very inexpensive.
