Growing up my grandparents had a fig tree. This was (and is) my favorite summer salad. A great mix both salty and sweet. You can grill or serve the figs fresh. If you try it, let me know how you like it.
Salad:
4-6 slices bacon or prosciutto (cooked and crumbled)
4-6 large fresh figs sliced
1/8 cup walnuts toasted, chopped or halved (optional)
1/8 cup soft goat cheese, crumbled
6 cups trimmed arugula or leafy green salad
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
1/4 cup thinly sliced red onion (optional)
Dressing:
3 tablespoons balsamic vinegar
1 tablespoon orange juice
2 teaspoons honey
1/4 teaspoon chopped fresh thyme
2 tablespoons hazelnut or olive oil
