We had potato salad with dinner tonight, and it was scrumptious. I found this recipe in September, when I had friends coming over for dinner. When I made this in September it was the first time that I had made potato salad from scratch, as my mother always bought the dressing at the store.
I know it's silly, but I'm so excited to have found a recipe that reminds me so much of my mother's potato salad, and it seems to be getting better every time. At first I thought it was really strange that I needed to put egg and vinegar in, but now that I have mastered it, I am really impressed with how simple it is.

I find it amazing how delicious these potatoes became.

You know, I have made those Butternut Squash fries that you posted like 6 times. They are a big hit here!
Gwen, this one calls for ground mustard, and even though I don't like mustard at all, I am happy to announce that ground mustard is now a stable in my kitchen:)
I'm glad you like the butternut squash fries, I have made them quite a few times as well, and they really are great. The best thing is that my picky husband actually loves them too.
Ang, I actually made these with potatoes that I got at I think 80 cents for three pounds. I usually only use brand new potatoes, but these turned out perfectly even with marked down potatoes:)
When my husband makes potato salad (he and Elliott both like it) he mashes the potatoes, and adds a bunch of stuff. Yuck.
Carla, that is actually quite funny. I always hated potato salad when I was growing up, and yes we ate a lot of potatoes. My dad was a potato farmer, so I even had to stand on the potato machine in the fall while he was picking up potatoes in the freezing cold. What did I do....? I sorted the rotten potatoes from the good ones, this was one awful job!
To this day, I still hate boiled potatoes, and it was only when I moved back to the farm after college that I started liking potato salad. I love them baked and roasted though.
I'm glad to hear that you've added dry mustard to your pantry. I consider that a necessity, along with things such as turmeric, rice, lentils and split peas.
I will eat any other type of potato though. I'm definitely a "meat-n-tater" type of gal!

what an odd potato salad, you cant taste the raw flour in it? my mom uses miracle whip to and lots of herbs to make her potato salad. It looks really good in your pics
