This is a recipe that I got several years ago from my Weight Watcher leader during a class. I don't remember the point value for it, but her version included using bbq sauce for dipping and I use creamy poppyseed dressing (yes, I know that's a no-no on WW, but it's what I like).
Chicken fingers
1 lb chicken tenders
3 T buttermilk
3T dijon mustard (I use honey dijon)
1/2 c of bread crumbs (just pour some in dish)
Preheat oven to 450 and put in your cookie sheet to preheat. Whisk buttermilk and mustard into small bowl. Put breadcrumbs in another small bowl. Dip chicken into buttermilk mixture and then into breadcrumbs.
When cookie sheet is preheated, remove from oven and spray with nonstick spray. Put chicken on sheet and bake for 6 minutes. Then turn chicken over and bake for another 6 minutes.
Carol's variation - use the honey dijon mustard. Use deviled egg tray for dipping - put buttermilk mixture in one side and breadcrumbs into other side. The mess is contained to 1 dish.
