After being sent home from my mothers house with several pears I decided I had better find something to do with them. So I searched for recipes and found one for Pear bread.
It ended up turning out really good! The bread was really moist and tasted sort of like spice bread. My hubby said he liked it much better than banana or pumpkin bread.
You will need:
1 cup vegetable oil *
2 cups granulated sugar
3 eggs
2 1/2 cups pears - peeled, cored and chopped ~ I put mine in the food processer.
1 cup chopped pecans
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
**Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 8x4 inch loaf pans.
In large mixing bowl combine oil, sugar and eggs, beat well. Stir in pears, pecans and vanilla. In another bowl, combine flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into the pear mixture; mix well. Pour batter into prepared loaf pans
Bake in preheated oven for 60 minutes, until a toothpick inserted into center of a loaf comes out clean. Allow loaves to cool in pans for 10 minutes before moving to a wire rack to cool completely.
*I actually subsituted 1/2 of the oil for applesauce when I made the bread.*
** Since I don't have a bread pan I used a mini bundt cake pan, and made 4 small loaves. I lowered the temp of the oven to 325 and it cooked about 50-55 minutes.**

I'm always looking for new ways to use pears, since it's the only fruit all of my kids will eat. This is genius! I make banana, pumpkin, and zuccini bread but I would have never thought to use pears.
