Mother's Imagination--Leftovers from Olive Garden

Last evening Mike and I went with his aunt to the Olive Garden in Hagerstown.  It is a brand new restaurant and made bigger than most I have dined in.  We injoyed the food very much, but as always there was too much.  Mike ordered the Chicken Milanese (good choice), his aunt got the eggplant parmeasan (one of my favorites), I had the Stuffed Chicken Marsala (new dish and very good).  We had about half of 3 dinners left to bring home.  Mike and I polished off two of them at lunch today.  The one left was a serving of spaghetti and there was 3 of us for dinner tonight.  What to do?

I need to clean out the refrigerator, since we are going away on Monday for about 10-12 days.  I had some sausage, a pepper, I had to buy an onion, 3 cloves of garlic.  I sauteed the sausage with chopped onions, pepper, and garlic.  Added a can of diced tomatoes, along with some seasonings:  oregano, basil, Italian seasoning, thyme, little salt, fresh ground pepper.  Then I stirred the spaghetti into the mixture, and mixed well.  Then dumped it into a casserole dish, sprinkled with parmeasan cheese and mozzarella cheese, and baked it at 350 for about 40 minutes, until the cheese started to brown.  There was a little broccoli left for Mike and me.  Some slice cucumbers for Anna.  It really turned out well and was enough to satisfy our hunger.
