This is an easy recipe that I pulled out of a Weight Watcher's cookbook. If you like Mexican you'll probably enjoy this one.
1 large onion, thinly sliced and separated into rings
6 6 inch corn tortillas, cut into 1/2 inch strips
1/2 pound cooked skinless boneless chicken breast cut into strips
2 tomatoes, chopped
1 11 ounce jar salsa
3/4 cup chick broth
3/4 cup grated low fat cheddar cheese
1. Prehet the oven to 400 degrees F. Spray a 9x13 inch baking dish with nonstick spray.
2. Spray a nonstick skillet with nonstick spray and set over medium high heat. Sautethe onion until softened.
3. Put half of the tortillas in the baking dish, covering the bottom(overlap the strips if necessary). Toop with half of the chicken, half of the tomaoes, half of the onion, and half of the salsa, then repeat the layers. Pour in the broth. Cover with foil and bake 15 minutes. Sprinkle with the cheese and bake, uncovered, until the cheese melts, about 5 minutes longer.
Makes 4 servings.
