I found this 15 years ago in some long forgotten regional Southern cookbook. Through the years, it's become the most requested by my kids - even over the chocolate/almond cake Julia made. It's moist and delicious - especially if you double the cream cheese frosting!
4 eggs
2 c sugar
3/4 c canola oil
2 1/2 c King Arthur flour
2 t baking powder
2 t baking soda
1 t cinnamon
1 1 lb package carrots, peeled and grated
Preheat oven to 350. Grease three cake pans.
Place all ingredients in mixer bowl and mix until blended thoroughly. Divide batter between cake pans. Bake about 45 minutes. Cakes will be done when firm on top and slightly pulling away from sides of cake pans. Remove to cool on a rack. Let cool completely, then carefully ease out of pans onto another cooling rack.
Lemon cream cheese Frosting:
1 8 oz package cream cheese
1 stick unsalted butter, softened
juice of half a fresh lemon
1 box (sometimes more) of confectioner's sugar
Mix til creamy.

Seriously, it sounds heavenly. I may experiment with making it with Splenda.

Hey Shannon! So, you STILL don't have a bundt pan? Silly.
You can make this in any old pan, really, but make sure you check the cake every once in a while - some shapes bake faster than others......
