The return of greens to co-ops in Minnesota is a sure sign of spring. Fresh arugula can now be found in bulk. Buying in bulk not only helps reduce waste, it helps you control your budget by buying exactly what you need. If you do not have a co-op or farmer's market nearby ask for arugula in your grocer's produce department and ask for local or organic.
15 oz can organic norhern (white) beans
1 bunch arugula, washed
1 stem of fresh rosemary (3-inches)
3 vine-on tomatoes (hydroponic tomatoes can be found locally year-round)
1/2 tsp sea salt
1/3 cup olive oil
2 cloves garlic
1 Tbsp red wine vinegar
1 tsp fresh ground black pepper
1/4 cup chopped Kalamata olives
Drain and rinse beans. Remove stems on arugula and chop. Chop tomatoes and olive. Mix these ingredients in a large salad bowl and set aside. In a blender of food processor, add garlic, rosemary, vinegar, salt and pepper. Process while slowly adding olive oil. Pour dressing over salad and gently combine. Serve at room temperature. The protein of the beans makes this great for a lunch or light dinner. It also goes nicely served with your favorite chicken recipe.
Remember to ask where your chicken comes from, too! How it is raised and processed is also important.
