It's too hot to cook, Baby! That's okay, we'll eat anything you set before us. It's almost too hot to eat anyway. What's in the fridge? Okay, just boil some potatoes up and a few eggs too. What could I do with the corned beef slices? Oh goody, I've got a cuke and a pepper from the garden. Wait, I could maybe finish up this little bit of frozen peas too. These are the makings of some kind of hash--nope , too hot. Cold?
Corned Beef Hash Salad
2 -3#'s cooked unpeeled red potatoes, cut in bite size chunks
1/2 cup mild onions, coarsely chopped (red onion would be nice, I used Vadalia)
1 green pepper, coarsely chopped
½ cup frozen peas
3 hard boiled eggs, coarsely chopped
1 medium cucumber, coarsely chopped
1/3 to ½ # corned beef slices, chopped into pieces
Toss in a big bowl with ½ c. mayonnaise and ¼ c. brown mustard, any kind, and salt and pepper to taste.
I would add 2 T. of horseradish if I wasn't serving it to my hubby who won't eat it. I think it would set it off just perfectly.
