My kids are pretty easy to please and will eat most anything that I put in front of them but there are exceptions. One of these used to be brussels sprouts. I LOVE them and can't get enough just the way they are but I put on my thinking cap and this is what I came up with. It's really easy and the kids love em.
1lb. Brussels Sprouts (cleaned, stemmed and split in half if overly large)
Good Olive Oil
4oz. Pancetta (Procuitto works too but I prefer pancetta)
Kosher Salt
Pepper.
Preheat over to roast at 375 degrees (350 if you have a convection roast option).
Once the sprouts are cleaned and split if necessary I put them in an oven safe Pyrex dish, sprinkle with olive oil, salt/peper and let sit a few.
Render the pancetta in a pan until it just starts to get crispy, toss in with the sprouts (including the rendered fat).
Place in oven for 20-30 minutes. I like to keep them in until the outer leaves begin to crisp up a bit. Test for tenderness before removing for good, it's possible to get some tough batches from the market.
That's about it, easy as pie (well easier than pie) and the kids love em!
