I am making myself a birthday cake and would like to try using fondant. it will be my first fondant experience, and if it doesn't come out perfect it's ok because it's for me. I had wanted to make an ice cream cake but am unsure if fondant is the best choice for an ice cream cake. I understand it can be affected by humidity, but what about the freezer? If you have any recommendations for using fondant on an ice cream cake, I'd love to hear them.
My grand idea is to have a layer of vanilla pound cake, add a thin layer of fudge, than a layer of homemade peppermint ice cream, another thin layer of fudge, and another layer of vanilla pound cake. I wanted to top it with a chocolate fondant, colored black and decorate it with some fun colored fondant cut outs. I haven't yet decided if I want to add any peppermint oil to the fondant. I'm still debating that part. If it turns out fondant is not a feasible choice, i'll use a dark chocolate mint fudge frosting and sprinkle coconut flakes and crushed peppermints on top.
