That is a good start, Deborah :)
Yeah, yeah, Sue.
extras: cold pack cheddar cheese spread, tomato, fresh mint
poach chicken. cook wheat according to package. layer wheat, chicken, tomato, mint and onion. drizzle with oil and salt and pepper. Cover and refrigerate 2 hours.
Mix port wine into cheese spread. Cover tightly and refrigerate for several hours. Serve with pretzels for a before-dinner snack.
For you, we can do that, Cristina :)
They didn't find this list in my kitchen. If they had, the chicken would be thighs, not breasts, and the pretzels wouldn't be the skinny things in the picture, but the big, thick sourdough ones from Snyder's, or better yet, the huge soft ones sold by street vendors if I'd been down to the corner today--and if they had survived the walk home! Furthermore, I wouldn't put two starches in the same meal. This must be desperation rations during a blizzard.
Pre-dinner drink:
Pretzels, radishes and the Kvanchkara
Main dish:
Port Chicken on a Bed of Bulgur
Chop onion and sauté in good olive oil. Add the bulgur wheat, stir a moment and add water, salt and pepper. Cover and steam until done.
Meanwhile, cut chicken into very thin slices about the size of the mushrooms. Clean and trim oyster mushrooms and leave whole. Saute in good olive oil until just tender. Add port wine, salt and pepper; boil until the wine is reduced by half. Taste and adjust seasoning.
Arrange the bulgur on a platter and top with chicken mixture. Garnish with additional radishes to keep this from being a completely ugly brown meal.
