These are wonderful as an appetizer, with soups, or as a side dish. I use sharp cheddar for the cheese.
1/2 c milk
1/2 c water
1/2 c unsalted butter
dash salt and pepper
1 c King Arthur flour
4 eggs
2 c grated cheese
egg wash
Preheat oven to 400. Fit a baking sheet with foil. Bring milk, water, and butter to a boil, reduce heat to medium. Dump the flour into the hot water/milk mixture all at once and stir until it clumps together in a ball. Add eggs, one at a time, and KEEP BEATING. Add cheese and beat.Remove from heat. Fill pastry bag ( or use two teaspoons) to pipe rosettes or double decker circles onto the baking sheet. Brush with egg wash ( a beaten egg) and bake about 17 minutes or until gougeres are slightly browned on their tops. Let cool, then remove to rack. If you are packaging them, let them completely cool before putting into cello bags.

King Arthur is the best commercial flour readily available in the US. There are a few that are better that are available only to us pros, but for the home baker, you can't do better. Never bleached, never bromated, superb, consistent quality from a small company. They were family owned from their inception in 1790 until 1996, when the Sands family sold - TO ITS EMPLOYEES.

Katrina - what kind of cheese do you like to use? I like parmigianno regiano, but have experiments with a couple of blue cheeses with excellent results.

I can buy at least 6 of their products at my local supermarket - unbleached all purpose flour, bread flour, organic AP flour, white whole wheat flour, organic white whole wheat and their whole wheat flour. All are marvelous! Once in awhile, when it isn't on sale I'll buy the Shoprite AF flour which is pretty good. Has a good protein count. I mostly stick to King Arthur though. I also buy the SAF yeast from them in pound packages. I do that online through their catalog. They also sell incredible chocolate for baking.
Anyway, the gougere sound really good. I love them. They are so delicious.
