2 lbs. lean ground beef
1 cup chopped celery
1 cup chopped green bell pepper
1/2 cup chopped onion
1 can Progresso hearty tomato soup (19oz)
1 can condensed chicken gumbo soup (10 3/4 oz)
2 tbsp. Dijon mustard
2 tsp. dried cajun seasoning
12 hamburger buns
1. In a 12 inch skillet preferably non stick, cook ground beef, celery, bell pepper, and onion over med. to high heat for about 5 to 7 minutes. Stir occasionally until the beef is cooked through;drain.
2. Reduce the heat to med. Stir in all remaining ingredients except the buns. Cook about 20 minutes longer until the mixture is bubbly and the veggies are tender. Stir occasionally. Spoon the mixture into the buns and serve!

This sounds very good and it would be easy to slip in whatever leftover vegetables you have on hand.
