For a quick and easy weeknight dinner that's also relatively healthy, try this menu, with the main event being tilapia fish. Never had tilapia? It's a mild and delicate fish that cooks very quickly and works well with a lot of flavors.
Shopping List:
2 tilapia filets
Prepared pesto sauce
1 box of Near East Parmesan Couscous
Fresh spinach or bagged baby spinach
Your favorite salad dressing
To Prepare:
1. Gather your purchased ingredients, including some extra virgin olive oil, salt, pepper, and some margarine (for the couscous).
2. Salt and pepper each side of the tilapia. Set aside.
3. Take a small saucepan and prepare the couscous to the box directions.
4. In a medium sized frying pan, heat up 2 tbsp of extra virgin olive oil over medium flame. Add seasoned tilapia filets to the pan. Cook 3-4 minutes on each side, until the fish just starts to flake. Be careful when turning the tilapia, as it is delicate and will break.
5. While the tilapia is cooking, portion out spinach into 2 bowls and toss with salad dressing. Sprinkle on some parmesan cheese if you have some on hand.
6. When fish is done, fluff the couscous with a fork and plate. Place tilapia filet on plate as well and smear with 1-2 tbsp of pesto.
7. Enjoy! Goes well with a glass of pinot grigio.
