If you like to try new cheeses, I definitely would encourage you to try Manchego with Rosemary. This Spanish cheese, which I picked up at Whole Foods, has a rich creamy texture. Encrusted with rosemary, the creaminess contrasts nicely with the flavor of the herb. We enjoyed it with crackers for an appetizer, but I'd imagine this would also be great melted on pasta or in a salad.
We paired this cheese with a glass of 2004 Villa Erbice Soave Superiore. Soave is not known for being an impressive wine, but this one complemented the cheese quite well. This Italian white is quite dry, with just a hint of floral undertones and clean finish. Its dryness helped accentuate the flavors of the cheese.
Soave comes from Northeastern Italy, near Verona. Soave Superiores are made of at least 80% gargenaga grapes plus a blend of chardonany, pinot bland and trebbiano. If you're looking for a change of pace from chardonnays, I'd say gargenaga would qualify!

I also haven't tried Soave. I am a neophite with wine and have only started with the Central Coast of California wineries that are close by. Hmm, I have to get out more!
I've had Soave but not the superiore, will have to keep that in mind next trip to the store.
